Communion Bread
Cream 3/4 cup butter or oleo
Gradually add 1/2 cup powdered sugar.
Add:
2 Tbl. evaporated milk
1 tsp. vanilla
1/4 tsp salt
Mix well
Blend in 2 cups of flour.   Roll out on cookie sheet that is sprinkled with flour.
Bake @ 350 for 12 - 15 minutes
Cut into squares while still warm.
Omlets in a Bag
Have guests write their name on a
quart-size freezer bag with permanent marker.
Crack 2 eggs (large or extra-large) into the bag
(not more than 2) shake to combine them .
Put out a variety of ingredients such as:
cheeses, ham, onion, green pepper, tomato,
hash browns, salsa, etc.
Each guest adds prepared ingredients of choice
to their bag and shake. Make sure to get the
air out of the bag and zip it up.
Place the bags into rolling, boiling water for
exactly 13 minutes. You can usually cook
6-8 omelets in a large pot. For more, make
another pot of boiling water.
Open the bags and the omelet will roll out
easily. Be prepared for everyone to be amazed!
Nice to serve with fresh fruit and coffee cake;
everyone gets involved in the process and a
great conversation piece.
Pineapple Rice Pudding
Rice pudding
4 cups milk, divided
3 cups cooked long grain rice
2/3 cup sugar
1/2 tsp. salt
1 ~ 3 oz. cream cheese, softened
2 eggs
1 tsp. vanilla extract
Combine 3 1/2 c. milk, rice, sugar, & salt; bring to boil over med. heat.  
Cook 15 mins. till thick. In a bowl beat cream cheese, add eggs and remaining milk and
stir into the rice mixture.   Cook and stir for 2 mins. on med. heat. Add vanilla.
Pineapple Sauce
1 (20 oz) can pineapple chunks
1/4 cup packed br. sugar
1 Tbs. cornstarch
1 Tbs. margarine
1/8 tsp. salt
1/2 tsp. vanilla
Drain pineapple, reserving juice. Combine br. sugar, cornstarch, butter, salt, and reserved juice.   Bring to a boi; cook and stir for 2 mins. or till thick.
  Stir in vanilla and pineapple. Spoon over the rice pudding.
(This is soooooooooo good eaten warm!)
Cream Puff Pie
For the shell Boil together
1/2 cup oleo
1 cup water
Add 1 cup flour
Remove from heat, beat in 4 eggs one at a time.   Bake for 30-35 mins. @ 400 degs.
in a 9x13 pan (no grease).   Let cool.
For the filling Beat together
4 cups of milk
1 - 8 oz. softened cream cheese
3 small french vanilla instant pudding
Put this on the shell to within 1 inch of the edges.   Top with Cool Whip and garnish with
chocolate shavings!   This is an EXCELLENT dessert from Sandy Fleming.
